Coconut Chia Pudding

With Berry Coulis & Granola


What you'll need


  • 1 tin coconut milk

  • 500g frozen mixed berries

  • 2 tbsp maple syrup

  • 4 tbsp chia seeds

  • Granola to serve


Start by making the coulis..


Start by making the coulis – there’ll be plenty of this, I find it best to make in a batch like this and then you can either chill it in the fridge for up to a week, freeze it in small batches or double up the rest of the ingredients and make extra chia puddings, they keep for 2-3 days in the fridge if you’re looking to bath prepare them.


Heat the frozen berries in a saucepan over a medium-low heat, stirring regularly. When the berries have mostly defrosted add 1 tbsp of maple syrup and keep stirring until fully defrosted. Remove from the heat and blend with a hand blender, if you don’t have one you can mash/breakdown the berries with the back of a fork or blend in a food processor. They don’t need to be perfect and you can make it as smooth or lumpy as you like depending on preference. Transfer to a dish and leave to cool. Tip – I opt for just 1 tbsp of maple here as I find the coconut mix quite sweet so leaving the coulis with a bit of a sharp edge balances, if you prefer it less or more sweet adjust your maple syrup accordingly.


Empty the contents of your coconut milk into a large bowl, if you have the tins that come out as a large lump then you’ll need to break it down, again I use a hand blender here but you can improvise! Once your coconut milk is smooth, add the chia seeds, 1 tbsp of maple syrup and mix well. Cover and set in the fridge overnight for at least an hour. 


When you’re ready to serve your chia pudding, layer a few tbsps of coulis at the bottom, then 1/2 the coconut chia mix and top with granola. Eat straight away to keep that granola fresh! If you’re preparing in advance or making to take on the go, keep the granola separate until the last minute. 


Its such an adaptable recipe, if you don’t have maple you can use agave, coconut nectar or even honey to sweeten it, just adjust your measurements. You can swap the coconut milk or a mixture of yoghurt and plant based milk and you can even swap the granola for a mixture of chopped nuts and seeds if you’d prefer, enjoy playing around with it until you find the balance that works for you.
