Bananas mashed up with ground oats, makes pancakes?
WHAT? ...I hear you say.
Well ohh yes it surely does, and trust me they are so yummy!
What You'll Need
1 ripe banana peeled & mashed
50g oats
40g ground almonds
100ml Almond or plant based milk
1 tbsp Maple Syrup
1 tbsp Chia Seeds
1 tsp Cinnamon
1/2 tbsp Coconut Oil
Pinch of Pink Salt
To Serve;
Cacao Nibs
Coconut & Almond butter
1 Banana, thinly sliced
How To Make
Blitz the oats in a food processor until they have a flour like consistency.
Combine the oat flour, chia seeds, ground almonds, cinnamon and salt in a bowl until any lumps are removed.
Add the mashed banana, almond milk & maple syrup and mix well, set aside for 5-10 minutes (don't skip this part the chia seeds need to absorb some liquid so a thicker batter forms).
Gently heat the coconut oil, using a low heat and a good none stick pan.
Once the pan is warmed, add a heaped spoon of mixture into the oil, using a spoon to push it into a roughly circular shape, the better should make 4 pancakes so if you're using a smaller frying pan you'll need to do this in 2 batches.
Cook for approx 3 minutes until you can see it starting to cook around the edges, turn the heat up to medium and cook for 1 more minute to give it some colour.
Gently turn them over and cook for 2-3 more minutes, keeping an eye on your heat and lowering it if you need.
Serve straight away with half the sliced banana on each, a tsp of nut butter and a sprinkling of cacao nibs.
Tip - I'm terrible for cooking all things on one heat regardless, but these really benefit from being cooked low and gentle, only hiring the heat after a couple of minutes to give them some colour.
