Peach Iced Tea

Sweet & Refreshing, Make Fresh or In Advance


Ingredients


Serves 2 Plus Extra Peach Syrup


1 tin of peaches (in Juice)

3 tbsp Maple Syrup 

2 Tea bags

Agave – optional








Start by making the peach syrup..


Pour the tinned peaches and their juice into a saucepan with the maple syrup and warm gently over a medium-low heat for 10-15 minutes. Keep stirring it to prevent it from sticking and turn it down if it starts bubbling too much. Once heated through break the pieces down with a fork, turn the heat off and leave to sit until it cools.

Once cooled then blend, either in a processor or with a hand blender (Nutri Bullet works great!) if you don’t have any of these options then you can press the mixture through a sieve.


The syrup will keep in the fridge in an air tight container for around a week.


For the iced tea..


Soak 2 tea bags in 400ml of boiling water for 4 mins. Remove the tea bags and top up with 400ml of cold water, add 4tbsp of the peach syrup mix well and transfer to the fridge for 30mins.

Split between 2 glasses, add 1-3tbsp of syrup per glass and a drop of agave if using, top up with ice and serve.



Tip – once the cooled tea is mixed with peach syrup you can store the ready made iced tea in the fridge for up to 2 days. Store it in a reusable bottle and its great to take on the go with you!
